It’s finally FRIDAY!! The weekend is here! I don’t know about you, but our family looks forward to the weekends. Usually on Friday’s we like to have pizza either home made or delivery- it’s just something that is a celebration of the weekend for us. This Friday was typical with breakfasts & lunches, but instead of pizza for dinner my 17 year old daughter was in charge of dinner and she wanted to make Lasagna Stew.

A few months back I invented this lasagna stew recipe and it was life changing! Our whole family loves lasagna, but it takes a lot of time and sometimes we just don’t have the time. It is a good meal to freeze though so whenever we do make it we’ll make 4-5 of them and pop the extras in the freezer for easy meals in the future. Well one day a few months back it occured to me, why not try something a little different? We usually combine spaghetti noodles with the sauce, why not do lasagna noodles instead? The only main difference is the cottage or ricotta cheese layer…. what resulted was the easiest and one of my family’s new favorite recipes! Get the recipe here. It’s a recipe that can easily be stretched to feed a lot of people or multiple meals too. When I make it, I make a huge 12 quart pot of it and we have it for 3-4 days afterwards for lunches.

  • Salad- leftovers

Total cost for this day: $22.18

Running Total Budget for the 30 days used:

Groceries purchased: $567.10

Groceries used in meals: $251.75

Date Night: $74.33

Pizza: $94.29

Our budget for these 3 for the 30 days is: Groceries- $600, Date Nights- $100 & Pizza- $100 Since we may not use all the groceries purchased in this time, and will be using some things we have on hand already, we will be tracking both the running total of the best estimated cost of meals each day as well as the cost of groceries/date nights/pizza purchased during the 30 days.
