This is a easy and delicious side dish to make any time of the year. Our family enjoys having them whenever we do a BBQ night. But it also pairs well with so many different foods from fish to chicken that we have it fairly often.
- Potatoes- any kind, but red is best
- olive oil
- minced garlic
Cut up the potatoes into chunks (not too small) You can cut up as many as you need.
Place on a cookie sheet, drizzle olive oil over the top of them, then add a few spoonfuls of minced garlic (or you can use garlic seasoning) and mix them so they are all well coated.
Bake at 425 degrees for about 40 minutes- hour depending on how golden/crispy you like the potatoes and how good your oven is. If you turn them half way they will have more even browning.
