This is my recipe for salsa, which I call “Miracle sauce” because it’s not spicy like salsa, and it contains 6 of the top 10 most healthy foods you can eat in it! I’ve had many requests for this recipe over the years so here it is…
We usually use this as a sauce over some chicken bread, but it also goes great as a salsa with chips/tacos/burritos etc, and I LOVE it over some scrambled eggs. Plus it’s full of so many healthy things- but the kids wont even know it!
- 1/2 bag of fresh spinach
- 2-3 T minced garlic
- 5 green onions- chopped
- 1/3 bunch of parsley
- Olive Oil (about 1/4-1/2 c)
- 4-5 fresh tomatoes (roma or on the vine is best)- chopped
- 3 cans of stewed tomatoes
- salt to taste
In a food processor add: spinach, garlic, onions, and parsley. Blend while adding the olive oil slowly. Add just enough olive oil so that the mixture blends easily.
Next add in the fresh & canned tomatoes. Blend until all are blended well (this isn't a chunky salsa). Add salt to taste.
Variations- if you want to make a spicy version of this just add some peppers, chilis, or a powdered form of either.
