If you love chocolate & mint, especially Andes mints, these cookies will rock your world! They are so delicious and easy to make. And bonus, if you can keep the andes mints on hand everything is easy to have shelf stable and on hand for those chocolate & mint cravings!
Here’s the ingredients I used (minus the canola oil)
- 2 boxes of chocolate cake mix
- 4 eggs
- 1 cup oil
- 1 bag of Andes mint baking chips
Mix all together and scoop onto a greased cookie sheet. Bake at 350 degrees for about 10-15 minutes (you want to take them out when they look slightly undercooked if you want them to be soft once they cool & set up)
