Awhile back I tried a new lemon bar recipe from pinterest that claimed to be the best…… Lies. It was one of the worst I’ve ever had. So I went back to my tried and true recipe that never fails! This batch pictured my 12 year old son even made and although he spread it out in a cookie sheet without doubling the recipe like I would have (so they ended up thinner than mine) the flavor was still amazing!!
As a side note, when he was making these we ran out of our liquid lemon juice, so we used a few packets of TruLemon with some water. I can’t say enough great things about these packets!! They are dehydrated then powdered lemon, no preservatives, no additional stuff. 1 packet is equal to 1 wedge or about 1/8 a lemon. I buy these in bulk and keep them on hand. Personally I put them in my water, but basically you can use them for anything you’d use a lemon for- like we did in this recipe. Here’s the amazon link where I buy mine, it’s the best price I’ve seen. (depending on the time of year this price can fluctuate though so I watch for it to be in the low $20 and then stock up)
- 2 c. flour
- 1/2 c. powdered sugar
- 1 c. butter- melted
- 1/2 c. flour
- 2 c. sugar
- 4 eggs
- 1/2 c. lemon juice
- 1/2 t baking powder
Mix the crust ingredients together and press into a 9x13 pan. Bake at 350 for 15 minutes.
Mix the topping ingredients together well then pour over the hot crust and bake at 350 for 25 minutes or until set (not wiggly). Sprinkle with powdered sugar.
