These were a fun experiment this year using Thrive Life freeze dried ingredients. The benefit of using freeze dried ingredients is you don’t get the drainage you would when using fresh fruit, in fact, freeze dried ingredients do the opposite and absorb moisture.
Another neat feature about this specific recipe or truffle making technique is that all the ingredients are shelf stable. So that makes it very easy to have the ingredients purchased ahead of time or as an addition to your food storage.
There are many different ways to make truffles. The recipes vary by ingredients and techniques. This year I created 3 different recipes with different ingredients and techniques to make the freeze dried truffles.

Ingredients
- 1 snackies pouch of Thrive Life Coconut bites
- 2 c. Thrive Life freeze dried pineapple
- 2 tubs of cream cheese frosting (I used Betty Crocker)
- 1/2 package of shredded coconut
Instructions
Blend the coconut bites and pineapple to desired consistency- some people like chunks, some like it smooth.
Mix coconut & pineapple with the frosting. Refrigerate for 2-3 hours.
Scoop out and roll into a ball then roll the ball in shredded coconut. These truffles will be on the softer side.
