This recipe is one of the new ones I created using Thrive Life freeze dried raspberries. They turned out SO Amazing! As a result of using freeze dried raspberries the truffles have a very fresh and vibrant flavor.

- 2 c. freeze dried raspberries- blended to a powder
- 1/4 c. heavy whipping cream
- 2 T butter
- 2 packages white chocolate chips
- 1/2 c powdered sugar
- 3-4 packets of True Lemon
Cook the heavy whipping cream and butter together until the butter is melted and the cream has got to a boil. Remove from heat and add raspberries.
In a glass bowl place both packages of white chocolate chips. Microwave for 30 seconds at a time then stir between until all the chips have melted.
Add to raspberry mixture and mix well. Refrigerate for 2-3 hours.
Combine the powdered sugar and true lemon in a small bowl. Roll the raspberry mixture into balls then roll the balls in the powdered sugar mixture. Enjoy!
