In the past I’ve made these truffles with fresh strawberries, and although they are delicious, the fresh strawberries can get watery and leak out of the chocolate after a day or two. Because of this I was so excited to make them with Thrive Life freeze dried strawberries instead. The end result was exactly as I had hoped!

- 2 cups freeze dried strawberries
- 1 package graham crackers
- 2- 8oz packages cream cheese
- 1 c. powdered sugar
- 2 t. vanilla
- 20 oz chocolate (can use chips, bars, almond bark, etc.)
Crush the graham crackers and strawberries to desired consistency. (some like chunks, some don't)
Beat the cream cheese, powdered sugar, and vanilla together until smooth.
Mix in the strawberries & graham crackers.
Spoon onto a cookie sheet using a small ice cream scoop- or if you don't have one you can refrigerate the mix until it's firm enough to roll into balls by hand. Once you have them scooped or rolled into balls on a cookie sheet place in the freezer for 2-3 hours.
Melt chocolate by microwaving it for 30 seconds at a time and then stirring until all the chocolate is melted.
Using 2 forks roll a frozen ball in the chocolate than place it on wax paper to harden.
Keep refrigerated or in a cool place.
