These cheesecake tarts were a basic cheesecake recipe that I added powdered freeze dried fruit to. As a result we got some amazing fruit flavored cheesecake tarts, and found a new way to use our freeze dried foods!
- 1 package of graham crackers- crushed
- 1/4 c. sugar
- 3/4 cube butter (6 T)- melted
- 2 8oz cream cheese
- 1/2 c. sugar
- 1 t. vanilla
- 2 eggs
- freeze dried fruit of choice- powdered
Mix the graham cracker crumbs, sugar, and butter together. Press into a mini muffin or tart pan. (with liners)
Beat the butter, cream cheese, sugar, vanilla, & eggs together until smooth.
In a blender mix the freeze dried fruit to a powder. Pour in the cheesecake mixture and blend together in the blender until smooth.
Pour into the tarts. Bake at 350* for 15-20 minutes.
