If you love meatloaf, but hate the 1-2 hours it takes to bake it these meatloaf muffins may be just the solution you need!
We’ve made them in muffin pans, and even made them into balls and frozen them which drastically reduces the cooking time for them as a freezer meal.
- 2 lbs ground beef
- 1 box stuffing mix
- 4 eggs
- 3/4 c ketchup plus some for topping
In a bowl mix all together just until they are all combined. Overmixing will result in tough meatloaf.
Spoon into muffin pan, or roll into large balls, top with ketchup, and bake at 375 for 40 minutes or until done.
