I first created this salad last Summer when I literally just used things I had on hand for a fruit salad and it became a favorite and one raved about at the potluck I took it to! Strawberries & peaches go amazing together! This batch I discovered that I didn’t have as much whipping cream or cool whip as I did last time, so it wasn’t quite as creamy. Creamy is better in my opinion, but this time was still good!
- 2 c. whipping cream
- 1/2 c. powdered sugar
- 1-2 t. vanilla
- 3 cans of peaches
- 10-15 strawberries- diced
- 1 tub (16 oz) of cottage cheese
- 1/2 a small box of peach jello
- 2 strawberry yogurts (about 12-16 oz total)
Mix the whipping cream with a hand mixer on high, once it starts to get a little foamy add the vanilla & powdered sugar (you can add more or less sugar to taste) and mix on high until it forms to soft peaks. You can also substitute this process by just using a tub of cool whip.
Mix in the remaining ingredients and stir together. Keep cool.
