Dutch oven potatoes are one of our favorite things to make when we go camping. Our recipe is pretty easy and customizable to your taste.
- 10-15 medium sized potatoes- sliced
- 1lb bacon- sliced
- 1 large onion- sliced
- 2 c. shredded cheese
- 3-4 T. olive oil or butter
Place the dutch oven on top of the hot coals or inside the edge part of the camp fire. Cook the bacon with the butter or oil until half way cooked, add onions and cook until they start to caramelize then add potatoes. Cover with the dutch oven lid and cook for about 40 minutes-1 hour stirring about every 15 minutes or so. Add cheese once the potatoes are cooked and serve once the cheese is melted.
