Years ago there was a local restaurant that made the most amazing cream of asparagus soup. Unfortunately, the restaurant closed and as a result the amazing soup was now gone forever too.
The past few days I’ve been craving the soup, so today I decided to make my own. Forget the past! This recipe was WAY better than I even remember their soup being. I hope you enjoy!

Ingredients
- 2 yellow onions- chopped
- 1 cube of butter
- 2 bunches of asparagus- chopped into 1-2" pieces
- 1/2 c. flour
- 3 c. chicken broth
- 2 c. heavy whipping cream
- 3 c. milk
- 1/2 c. bacon crumbles
- 6 T sour cream
- 1 c. shredded parmesan cheese
- Salt & pepper to taste
Instructions
Sauté the onions in the butter for a couple of minutes. Add asparagus and bacon crumbles. Cook for just a couple of minutes then add the flour. Stir to coat everything well then add the broth, cream, milk, and sour cream. Simmer for 5-10 minutes then add the parmesan cheese. Cook until the asparagus is as soft as you like it. (Some like a little crunch, some like it really soft- just remember to keep stirring it or the bottom will burn)

You could make this entire recipe using Thrive Life freeze dried ingredients! As a matter of fact, for the chicken stock I used 3 c. of water and 3 t. of Thrive’s chicken bouillon.

One cube is equal to 1/2 cup
