This is an easy casserole for dinner that is both filling and delicious! We use the chicken cooked in enchilada sauce all day in the crock pot, but you can also use boiled chicken (just add the can of enchilada sauce when you mix it all together) We serve this with a little sour cream on top.
- 4 chicken breasts (cooked in the crock pot in a large can of enchilada sauce)
- 2 cups of rice (precooked amount)
- 4 cups of water
- 2 cans of black beans
- 2 cans of corn
- Enchilada seasoning (optional)
- 1 c. mozzarella cheese- shredded
Cook the chicken breasts in a large can of enchilada sauce. I cook this in the crock pot all day for good flavor, but you can also just boil the chicken and add the sauce when you combine everything else. Shred the chicken once it's cooked.
Cook the rice in the water by bringing it to a boil, then cover with a lid and remove it from the heat.
Mix together all the ingredients except the cheese. Pour into a casserole dish and top with cheese. Bake at 350 degrees until the cheese is melted.
For the enchilada seasoning I had some Homemade Gourmet brand seasoning I used, but you can use any type of enchilada seasoning you like. Also, if you need to you can add more enchilada sauce when you mix everything together.
