These mini corn dog muffins are a perfect snack or lunch. They hold up well and would work great in kids home lunches to take to school. We made them with both cut up hotdogs as well as lil smokies and both were great.
- 1 package of hot dogs or lil smokies
- 1 c. flour
- 1 c. yellow cornmeal
- 2 T sugar
- 1 t. salt
- 1/2 t. baking powder
- 1/2 c. butter- melted
- 1 c. milk
- 1/2 c. sour cream
- 2 eggs
- 2 T. Mustard
- 2 T. Honey
Cut up the hotdogs and set aside.
Mix all other ingredients together and spoon into a mini muffin pan. Place a sliced hot dog or lil smokey in each muffin filled with batter and push it into the batter a little.
Bake at 375 degrees for 15 minutes or until mini muffins start to get golden.
The mustard & honey ingredients can be varied- I used 2 T of honey mustard dressing we needed to use up in addition to the recipe. You can use dijon mustard, honey mustard, etc. You just want to have a good balance of honey & mustard.
