DINNER IN A PUMPKIN

You read the title right, this recipe is for dinner in a pumpkin! We look forward to making this recipe every Fall. It’s got a great balance of ingredients and a unique flavor that I hope your family will love!

Ingredients

  • 1 large pumpkin
  • 3 c. of rice (cooked in 6 c. water)
  • 2# ground sausage (I use maple flavored)
  • 1 onion- chopped small
  • 1 head of cabbage- chopped finely
  • 2 cans of corn
  • 2 cans of green beans
  • 3 cans of cream of mushroom soup
  • 1-2 t. cinnamon
  • 1 t. nutmeg
  • 2 t. onion powder

Instructions

Cook the rice in the water.  While it's cooking brown the sausage and add the onion.

Once the rice is cooked, add all the ingredients including the rice & sausage/onion mixture together in a large bowl. Mix together.

Cut the pumpkin in half- or if you want to do a fun presentation just cut a lid off the top and scoop out the seeds.

Fill the pumpkin with the rice mixture, place on a cookie sheet and bake at 400 degrees for about 1 1/2- 2 hours or until the pumpkin is soft.

Serve & enjoy! Be sure to scoop some of the pumpkin out as you dish up the rice mixture.
