EASY SLOW COOKER MASHED POTATOES

This is by far the easiest way to make mashed potatoes. At Thanksgiving time when you’re making multiple dishes this recipe is a heaven sent!

In the morning, wash your potatoes and put them in the slow cooker with some chicken stock and minced garlic. Cook on low all day, or for a few hours on high.

Not only does this spread out your meal prep tasks, it doesn’t take up stove or oven space.

Ingredients

  • 12-20 red potatoes (depending on how many you're feeding, and the size of the potatoes)
  • 2 c. chicken broth
  • 2 T minced garlic
  • 1 c. sour cream
  • 1 cube of butter
  • Seasonings of choice
  • Milk to desired consistency

Instructions

Wash the potatoes.  You can either cut them and put them in the slow cooker to speed up the process, or put them in whole if you have plenty of time. (when I put them in on the morning of Thanksgiving I put them in whole and cook on low all day to be ready mid afternoon)

Add garlic and chicken broth and cook on low for 6-8 hours, or on high for 2-4 hours (depending on how many potatoes you do and if you put them in whole or cut up).  Put the lid on the slow cooker and leave it alone while you focus on other things.

Once the potatoes are cooked, add the butter, sour cream, sour cream, and mash the potatoes adding milk as needed to get your desired consistency.
