Fresh guacamole is delicious!! It’s a fact. It’s also a fact that fresh avocados can be expensive and hard to find good ones year-round. Insert freeze dried guacamole idea!

This was one of my freeze dryer experiments that was a big success. I plan on making lots more as soon as avocados go on sale. With a little bit of cold water and a couple minutes to re-hydrate the freeze dried guacamole tastes like it was just freshly made.

Watch the video below to see the freeze drying process. My Guacamole recipe is below.

  • 4-6 Avocados scooped out
  • 1 red onion
  • 1 T minced garlic
  • 1 T cilantro
  • 3 T Lime juice
  • 1 can diced tomatoes- strained (or fresh tomatoes)

Guacamole is one of the easiest things to make and can be customized to your preferences.

Mash the avocados and mix everything together.  If you want it thick be sure to strain your tomatoes well.  If you want it thinner just add some of the juice from the tomatoes.

You can use any type of onions you like, I like red onions because they have great flavor & color.

You can use canned diced tomatoes, fresh tomatoes, or even your favorite salsa.

Sometimes we add bacon bits as well!
