If you’re looking for a cheap, easy, quick meal that you can almost always have the ingredients on had to have as a staple meal, this is a great one! My son loves making and eating this. Because the main ingredient is rice, it’s also a pretty filling meal, and each person can customize theirs with the toppings they like= less complaints at the table. Because the main ingredients are rice & gravy, it also makes it a easy recipe to stretch and feed a lot of people.

Ingredients

  • 2 cups of rice
  • 2 cans of cream of chicken soup
  • 4 can fulls of milk (use empty soup cans)
  • Optional toppings: Cheese, bacon crumbles, green onions, tomatoes, hard boiled eggs, salsa, pineapple, peppers, etc.

Instructions

Cook the rice in a rice cooker, or in a sauce pan.  We cook it in a sauce pan by adding 4 cups of water to the 2 cups of rice, bring to a boil, then cover with a lid and remove from the heat.

For the gravy- in a sauce pan mix the cream of chicken soup and the milk.  Stir until it's warm & smooth.

To assemble: scoop rice into a bowl, pour gravy on top, then add whatever toppings each person likes.

Personally I love cheese, bacon, green onions, and hard boiled eggs.  The beauty about this recipe is that it works great for families because each person gets to customize what's on their rice & gravy! And as all parents understand, the less complaints about dinner the better!
