INSTANT POT SOUR CREAM PORK & POTATOES

This week I am doing a no sugar and no flour challenge. So it’s got my creativity turned on to full force!

Last night I made this, and although it was just okay to my husband- myself, the kids, and some neighbors all really liked it. I wanted to share the recipe before I forgot it! Keep in mind, I cook without measuring, so the amounts are approximate and totally adjustable to your taste.

The seasonings I used were garlic salt and this Bruschetta seasoning I got both from Costco. The Bruschetta seasoning is similar to Italian seasoning if you want to substitute it.

Ingredients

  • 6-8 pork chops
  • 12 potatoes- sliced thickly
  • 3 T butter
  • 1 yellow onion- sliced
  • 2 T garlic
  • 1 1/2 c. beef broth
  • garlic salt
  • Bruschetta seasoning (similar to Italian seasoning)
  • 2 c. sour cream
  • 1/3 c. parmesan cheese
  • 1 T cornstarch

Instructions

Set your instant pot to saute.

Place the butter and pork chops in the bottom and cook until brown and caramelizing.  Season them with the garlic salt and Bruschetta.  Once the pork chops are browned on the outside remove them from the instant pot and set on a plate.   

Add the sliced onions and garlic to the instant pot (still set to saute) and cook for a minute scraping up the bottom (all the good flavor!)  Add the pork chops back into the instant pot along with the potatoes and the beef broth.  Place the lid on the instant pot and cook on manual setting for 10 minutes.

Once the instant pot is done release the pressure and then take off the lid and remove both the potatoes & pork chops.

To the juice/broth left in the instant pot add the sour cream and cornstarch and whisk until it starts to thicken (set the instant pot to saute setting again) Once the sauce is the desired thickness add the cheese and turn off the instant pot.
