I invented this recipe a few months ago and have made it multiple times since. Try it out and you may just be saying what I did “why didn’t I think of this sooner?!?” If you love lasagna, but hate the time it takes to make it, you’ll love this! It’s soooo easy! And it can be stretched to feed a lot of people, or multiple meals.


Lasagna Stew

  • 2# ground beef
  • 4 T. garlic- minced
  • 1 onion- chopped
  • 4 cans Italian stewed tomatoes
  • 4 jars of spaghetti sauce
  • 2 c. mozzarella cheese
  • 1/2 c. parmesan cheese


In a large pot put a little bit of olive oil in the bottom and saute the onion and garlic until it gets a little golden, then add the ground beef and cook until brown.  You can add any seasonings you like- I usually add Italian Seasoning.  Then add the canned tomatoes & sauce.  At this point you can simmer the stew for as long as you want, you can add water if it starts to get too thick.  I usually make this a few hour process to get all the flavors infused well, but if you were in a hurry you could just proceed to the next step.

Add your lasagna noodles- I break them into the pot in about 2" strips leaving the width and lasagna look of the noodles.  Stir the noodles into the sauce and let cook for about 30 minutes or until they are soft.  

Next add about 1 c. of mozzarella cheese and 1/2 c. of parmesan cheese and stir into the noodles & sauce.  Then sprinkle the rest of the mozzarella cheese on top and place a lid on the pan and turn off the heat.  Once the cheese is melted you're ready to eat!


This recipe can be made with whatever spaghetti sauce recipe & ingredients you like, you can adapt it to different types of meats, cheeses, etc. Have fun!
