LEFTOVER MASHED POTATO BALLS

Do you ever wonder what to do with leftover mashed potatoes? There’s actually lots of options so don’t let them go to waste!

This week we had a bunch of garlic mashed potatoes left over. Being that they were garlic seasoned that does reduce some of the ways we can reuse them, but I still was able to come up with this amazing recipe! And like most of my recipes- mix and match, change it up to whatever you like!

LEFTOVER MASHED POTATO BALLS

Ingredients

  • Leftover mashed potatoes
  • bacon
  • green onions
  • shredded cheese
  • sour cream

Instructions

In a bowl mix your leftover mashed potatoes with the desired ingredients. (think of the type of things you'd have on a baked potato) Leave the sour cream to top it with.

Form into balls and place in a muffin pan.  Bake at 350 degrees for about 20 minutes.  Top with sour cream and enjoy some awesome mashed potato balls!
