This is my version of a recipe my sister in law Wendy found in a magazine years ago. I don’t even remember the original recipe- but my version is better anyway! 😉

You can make homemade biscuits for this recipe- but the store bought ones are only about 50 cents a can for 10 of them so it’s a pretty cheap meal to make. It’s perfect for feeding a large group without breaking the bank too!

Any unused meat filling can be used for other things like a meat pot pie, shepherds pie, etc. You can even freeze it.

Ingredients

  • 1 lb ground beef- browned
  • 1 package of frozen peas & carrots
  • 2-3 cups of bbq sauce (I use KC Masterpiece and eyeball it)
  • 24 refrigerator biscuits
  • 1/2 cup shredded cheese

Instructions

Cook the ground beef then add the frozen veggies & bbq sauce.

In a muffin pan place one biscuit in each hole.  Scoop some of the meat mixture on top, then place a second biscuit on top and sprinkle a little cheese on top.

Bake at 350 until the biscuit is golden and cooked.

Notes

*You can also make this in a casserole dish by just lining up the biscuits along the bottom and scooping the meat mixture in then placing the biscuits on top as closely lined up to the bottom one as possible. (this works when making this meal to feed more people)
