This is my moms pumpkin bread recipe. She used to make mini pumpkin bread loaves for all the fathers in our ward on Father’s Day each year.
You can add nuts, chocolate chips, or leave them plain.
One thing to remember is this recipe WILL STICK to you pans! Be sure to grease AND flour your pans really well.
- 4 1/2 c. brown sugar
- 2 1/4 t. cinnamon
- 1 t. ginger
- 5 1/2 c. flour
- 6 eggs
- 1 c. water
- 2 1/4 t. salt
- 1 1/2 c. nuts or chocolate chips (optional)
- 1 large can of pumpkin (about 3 1/2 cups)
- 3 t baking soda
- 1 1/2 c. oil or applesauce
- 2 1/4 t. nutmeg
- 1 t. ground cloves
Mix all together. Bake at 350 degrees for 90 minutes (large loaf pan) or 25 minutes (small loaves). Recipe makes 2-3 large loaf pans.
