SWEET POTATO CASSEROLE

About 10 years ago my sister in law brought this casserole to Thanksgiving dinner, and it’s been the only one I make ever since. Some people may love the sweet potatoes with marshmallows on top, but not me!

This casserole may not look pretty- but the taste is oh my goodness amazing!

Sweet Potato Casserole

Ingredients

  • 2 large cans of sweet potatoes
  • 1 c. milk
  • 1/2 t. cinnamon
  • 1/4 c. sugar
  • 2 eggs
  • 3/4 cube of butter (6T)- melted
  • 1/2 t. nutmeg
  • Topping:
  • 1 c. brown sugar
  • 1 1/2 c. corn flakes- crushed
  • 1 c. pecans
  • 1 1/2 sticks butter- melted

Instructions

Mix the casserole ingredients together.  You can use a hand mixer if you don't want sweet potato chunks, or a potato masher if you do want some chunks.

Spread into a greased casserole pan.  Bake at 400 degrees for 30 minutes.

Mix all the topping ingredients together.  Sprinkle on top of the casserole and bake for another 15 minutes.
