Fried Yellow Squash

My friend and neighbor made this for us a few years back and it’s been one of our go-to’s with yellow squash ever since. Especially when you have an abundance of it from your garden!

Using eggs and olive oil it’s a fairly healthy and protein filled side or snack as well.

Ingredients

  • Yellow squash- peeled & sliced
  • eggs
  • olive oil
  • salt & pepper

Instructions

Peel the outside of your squash (optional, but it does make them turn out a little better and not as chewy)

Slice them into 1/4" wide circles.

In a bowl crack some eggs (use as many as you need depending on how many squash you're frying) and whisk them with a fork until they are well blended as if you were going to make scrambled eggs.

In a skillet cover the bottom with olive oil (or you can use butter) and get the pan & oil hot.  Once they are hot dip each squash circle into the eggs then place in the hot pan.

Season with salt & pepper.  Turn the slices over once they are golden and season with salt & pepper again.  Once both sides are cooked remove the slices from the pan and place on a paper towel to absorb excess oil and place the next batch into the pan and repeat the process until all your squash is fried.
