Quick homemade ravioli

Ravioli is one of the few things I don’t have much experience with making- so the challenge was on! Since my family loves lasagna, heck we love all pasta, I thought I would come up with a lasagna ravioli invention. But how to make the ravioli’s homemade- and without making a huge mess in my kitchen, and in under a hour (yea the inspirational recipe of that day was a last minute one). So this is what we did-

Ingredients

  • 1 small tub (about 2 cups) of cottage cheese
  • 3 eggs
  • 1 cup mozzarella cheese
  • 1/2 cup chopped fresh spinach
  • 1 T Italian seasoning
  • 2 t. garlic powder

Instructions

Mix all together well. Then for the ravioli's we used some wanton wrappers- easy!

Lay 1 wrapper down and put a scoop of the cheese filling in the middle (it will take a little bit of practice to get the portions right)
Then using your finger and a bowl of water, spread water around the edges of the wanton wrapper. Place another wanton wrapper on top. At this point you can either press it together with your fingers, a fork, or I used a zigzag cutter from Tupperware that gave it the perfect ravioli edging!

(I had my oldest 2 kids help fill them and they had a blast!)
Be careful not to let them touch after they are done or the wanton wrappers will stick to each other! Now it's time for a water bath!

Place them into your pan of softly boiling water and let them cook for about 2-3 minutes. Remove them from the water- I found it was best to put them directly onto the plates because they were pretty limp. Pour your spaghetti sauce on top and enjoy!

When all was said and done, it was a fun project and fun to make for something different, but I think I will try a dough from scratch next time I have time because the wanton wrappers were easy- but didn't hold up as much as I would have liked them to.
