With our abundance of zucchini from the garden it’s time to make some zucchini bread!
This recipe I always use applesauce instead of oil and it makes the most moist and healthy bread! If you prefer oil you can use that instead of the applesauce though.
- 3 eggs
- 2 c. Sugar
- 3 t. vanilla
- 1 c. applesauce
- 3 c. grated zucchini
- 3 c. flour
- 1 t. salt
- 1 t. baking soda
- 3 t. ground cinnamon
- 1/4 t. baking powder
Mix all together. Pour into greased & floured bread pans. Bake at 350 degrees for 1 hour.
Yeilds: 2 full size loaves (or 8 small loaves- these bake faster)
This recipe can easily be multiplied. I often triple the recipe with no problems. The bread freezes well too.
