I’ve had TONS of requests for this recipe over the years and I’m FINALLY getting it posted.
About 5-6 years ago my husband and I purchased a mini doughnut machine and started a food trailer business. I created this doughnut recipe and it worked great for us. We get lots of compliments and requests for the recipe. I’ve never made it in a regular oven, but I imagine you could bake or fry the batter without the machine like ours and it’d be fine.
We’ve done variations of this recipe including: pumpkin, apple, and chocolate. Watch the video below for my variation suggestions.

Ingredients
- 10 1/2 c flour
- 2 t nutmeg
- 4 t baking soda
- 4 t baking powder
- 2 2/3 c sugar
- 8 whole eggs plus 8 egg yolks
- 1 c butter (2 cubes)- melted
- 3 c buttermilk
- 1/3 c vanilla
Instructions
Mix all together. Once combined turn the mixer on high and mix for a minute to whip it up good. Pour into the doughnut machine hopper, or fry/bake in doughnut molds.

Im from the UK, what does the measurement “c” mean ?
c= cup
t= teaspoon
T= Tablespoon

We have a mini doughnut and follow your recipe to a t. But we find by the time we get to market. Our dough is a big gluey mess. We constantly add more milk. Any other suggestions how to fix this issues for the machine
Make sure it’s kept cool. It’s a learning curve to find the right consistency for the machine to make the best doughnuts. If you scoop some with a spoon then turn the spoon sideways it should take about 1-2 seconds to fall off.
The batter will be sticky- but should be somewhere between cake batter and brownie batter consistency.
