I wanted to try a version of a casserole out in my Ninja Foodi. We had it for dinner and although the flavor was great, the sauce was pretty thin due to the water that had to be added to pressure cook it. We served it over rice which helped, but I think next time I make this I will bake it in the oven instead. My husband said it tasted better the second day- go figure.
If you don’t have a Ninja Foodi yet, look into getting one!! It’s basically like an instant pot on crack. It can do so many more things- pressure cook, bake, roast, saute, air fry, dehydrate, slow cook, steam, and broil.
Basically it’s a crock pot, instant pot, oven, and air fryer all in one!

Ingredients
- 2 lbs chicken tenders or breasts cut up
- 2 c. mayo
- 2 c. sour cream
- 1 c. Parmesan cheese
- 1 c. mozzarella
- 4 T. chopped artichoke hearts
- 2 c. chopped spinach
- 2 c. water
Instructions
Add all to the Ninja Foodi and pressure cook for 6 minutes. Let sit for 4 more minutes before releasing the pressure vent.
Serve over rice.
Notes
You can also make this in a casserole dish in the oven. Just omit the water and pour the sauce over the chicken then top with cheese.
