These lemon berry blondies are the perfect Spring time dessert for any party or gathering. For this recipe I did 4 different kind of berries all in one pan, but you could do the whole pan in one flavor if you choose.

Ingredients

  • 4 eggs
  • 3 c sugar
  • 8 1/2 c flour
  • 2 t baking powder
  • 2 t salt
  • 4 cubes (1 c) butter- melted
  • 12 packets of TruLemon
  • 1 c water (or 1 c lemon juice instead of the TruLemon/water)
  • 4 c freeze dried fruits
  • Glaze:
  • 4 c freeze dried fruit
  • 4 packets of TruLemon
  • 2 c powdered sugar
  • 1/4 c water

Instructions

Mix all the blondie ingredients together- if you want to do different berry flavors like I did, divide your dough up accordingly and mix it with the different berries you want.

Press the dough into a greased cookie sheet and bake at 350F for 30 minutes.  Do not overbake!

For the glaze: blend the freeze dried fruit into a powder, then add the Trulemon, powdered sugar and water.  Mix until desired consistency adding more water and more powdered sugar as necessary.
