It was late, I didn’t want to make anything fancy for dinner, when I came across this idea for Vegetable Soup on Pinterest. Simple, easy, and fairly quick, so we tried it out. It was pretty good! Even my 3 year old loved it! It’s a great vegetarian meal, healthy, and a nice soup for cold days. Here’s the recipe-
Ingredients
- 2 T olive oil
- a couple of handfuls of baby carrots- chopped
- 1/4 c. celery- I always have this pre-cut in the freezer
- 1/4 c. onion- also usually pre-cut in the freezer
- 1 T minced garlic
- Cook the above together for a few minutes then add:
- 1 can diced tomatoes
- 3 c. chicken stock
- 2 potatoes- cubed
- Cook to a boil, then add:
- 1 can green beans
- Cook for another 15-20 minutes (until potatoes are getting tender) then add:
- 1 can corn
Instructions
Cook for a few more minutes then you're good to go! Enjoy!
