We tried this new recipe from a neighbor and of course altered it a bit- but oh my goodness it was delicious!!
We added ground turkey to it, you could leave that out or add another meat if you want some protein in the sauce.
My husband added some ranch dressing to a little bit of the sauce and that gave it a delicious kick- it was really good! Not sure I’d have it like that with pasta, but his addition would make a good sauce over chicken I bet.
We talked about adding more cheese and making it into a dip, or having it as is and adding rice to make it a more filling casserole.
So many options!! It’s a great way to use up your zucchini and make a tasty and healthy sauce!

Ingredients
- 4 T olive oil
- 3 T minced garlic
- 1 onion
- 3-4 large zucchini
- 1 1/2-2 c Parmesan cheese
- 1/2-1 c fresh basil
- 2 c heavy whipping cream, milk or coconut milk
- 2# ground meat (optional)
- Salt & Pepper to taste
Instructions
In a skillet cook the olive oil, garlic, onion, and zucchini until the zucchini is mostly cooked. Transfer to a food processor and add the basil, cheese, and cream/milk. Blend until smooth.
Cook the ground meat (optional- for this picture we did ground turkey) then add the blended sauce to the meat in the pan.
Serve with pasta or mix together with rice. Add more cheese to serve as a dip.
