Ingredients
- 2 Zucchini- sliced into spears
- 3 eggs- beaten
- 1 c flour
- 2 c bread crumbs or panko (seasoned is best!)
- 1/2 c Parmesan cheese (the powdered form is best for this)
- Seasonings of choice
Instructions
Combine the Parmesan cheese, bread crumbs and desired seasonings (I use Italian seasoning) and mix together then place in a plate.
Wisk the eggs until they are well beaten and place in a bowl next to the bread crumbs.
Put the flour onto a plate and place next to the eggs.
Dip each zucchini spear into the flour until coated. Tap off any excess flour then put into the beaten eggs and coat well. Next place into the bread crumbs and coat well. If it doesn't all coat you can always dip it back into the eggs then into the bread crumbs again. (this would be double battered)
Place each spear on to your greased cookie sheet. Bake at 426 for 15 minutes or until slightly golden.
