Bottled Cranberry Juice

Cranberry juice has so many health benefits it’s a good thing to have on hand and in your food storage. Cranberry juice is great for kidney and bladder issues.

Making your own cranberry juice is actually really easy! It’s a great thing to make when cranberries are on sale after Christmas/Thanksgiving. I was able to get a bunch of bags for 75 cents each after Thanksgiving this year.

Ingredients

  • Amounts are per jar:
  • 1 3/4 c of cranberries
  • 1/2 c sugar
  • boiling water (enough to fill the jar)

Instructions

In clean canning jars place your cranberries then pour the sugar on top of the cranberries.

Pour boiling water into the jar until it's full but leaving 1/2" headspace at the top.  Stir the sugar, cranberries and water.  Place a lid and ring on each jar and process in a water bath canner for 25 minutes (adjust for your altitude)

Let sit for 4-6 weeks before opening to drink as juice.  (similar to pickles, they need time to do their thing)

When ready to drink, strain the cranberries out and enjoy!

Notes

You can do this same method for other fruit juices such as grapes, blueberries, raspberries, etc. You can strain with cheesecloth and mash the fruit to get more flavor in your juice when you're ready to drink it. The remaining fruit can be turned into homemade fruit leather.
