This is a copycat recipe of one of my favorite local sandwich shops. It is so refreshing and delicious it’s one of our favorite recipes. The secret is using Lighthouse Red Wine & Olive Oil dressing. You can find it in the refrigerated section of your grocery store by salad stuff. (it has to be refrigerated)

Ingredients
- 2 boxes tri colored Rotini
- 2 large avocados- diced
- 1 cup cherry tomatoes- cut in half
- 1 small can of sliced olives
- 1 red onion
- 1 cucumber
- 1 cup of sliced mushrooms
- 1 bottle of red wine & olive oil dressing
- Cheese- optional
Instructions
Cook the rotini pasta in salt water, strain and cool. Add to all other ingredients chopped into bite sizes. Pour the dressing over the top and mix together to absorb the flavor. Sometimes I find it need a second bottle of the dressing to kick the flavor up a bit, that depends on how strong you like your flavors.
