Ingredients

  • 2# Ground Sausage, I use Jimmy Dean Maple flavored
  • 4 cans of diced tomatoes, I always get the pre-seasoned ones with garlic
  • 16 oz cream cheese
  • 8 cups chicken broth, or water with chicken bullion
  • 1/2 bag of baby spinach
  • 2 packages (or 1 double package) of Costco's Tortellini (or any other brand you like)

Instructions

Cook the sausage until it's brown- if you let it caramelize a little it will add amazing flavor! Combine the sausage (you can strain the fat off if you like but I don't), broth, cream cheese, and tomatoes into your crockpot or stock pot if cooking on the stove.  Cook on high for 2-4 hours or low for 4-6 hours or until the cream cheese is melted and combined with the other ingredients.  (it will seem very watery at first, don't worry it will thicken up and get creamy) Add the Tortellini and spinach and cook for another 30 minutes or until they are both cooked to your desired doneness.
