This was a recipe that I threw together one night just to see how I could use up some of the zucchini in my garden- the results were AMAZING!
I had a friend come over and try them and she really loved them as well as my husband who kept snacking on them the rest of the evening and even ate a few for breakfast the next morning.
These are SAVORY, not sweet. They made a perfect side to our homemade spaghetti sauce I had made that day. (recipe coming soon)

Ingredients
- 4 c. shredded zucchini
- 2 1/2 c. Panko bread crumbs
- 2 eggs
- 3/4 c. chopped green onions
- 2 T. minced garlic
- 2 c. shredded cheddar cheese
Instructions
Mix all together and form into small flat fritter shapes (like cookies).
Bake at 400 degrees F for 20 minutes. Flip half way if you want them golden on both sides (I didn't flip mine)
