Chicken Sweet Potato Stew

We have a case of sweet potatoes to use up so we started trying some new recipes. This one sounded odd, and definitely not ingredients I would normally think to put together, but it turned out really good! EVERYONE in my family enjoyed it. (usually there’s 1 or 2 that either don’t like it or just meh about it)

My husband had 3 helpings and I had a second helping later in the evening. This one is a keeper!!

Ingredients

  • 4 sweet potatoes- peeled & chopped
  • 4 brown potatoes- peeled & chopped
  • 3 handfuls of baby carrots- cut into thirds
  • 5 chicken breasts (mine were frozen)
  • 2 cans of stewed tomatoes
  • 4 cups chicken broth (or what I do is 4 cups of water and 4 teaspoons of chicken bullion)
  • 2 t garlic salt
  • 2 t smoked paprika
  • 2 t marjoram
  • 1 cup heavy whipping cream

Instructions

Peel and cut potatoes into large chunks.

Layer all ingredients but the whipping cream into the crock pot in order of ingredient list.

Cook on high for 4 hours (if your chicken isn't frozen you can do 2 hours, or on low for 6-8 hours)

Remove chicken breasts and cut up.  Replace the cut up chicken and add the heavy whipping cream.

If you want your stew to be thicker you can add 1/2-1 cup of potato pearls, instant mashed potatoes, a can of cream of chicken soup, a packet of chicken gravy mix, or cornstarch to thicken up the soup.  I added potato pearls to ours and it was fantastic.
