Last night we through this together and HOLY AMAZING BATMAN!! This was so good everyone in my family was raving about how much they liked it. A welcomed change from the complaints of “I don’t like xxxxxx” (said in a whiny tone that every mom hates)
I realized later that this would also make a great food storage meal since you could literally have all the ingredients in a shelf stable version and just warm them up together! (using powdered cream cheese & canned chicken)
This will be added to our favorite meals list to be made more often, especially with Fall/Winter coming up soon! Enjoy!

Ingredients
- 4 chicken breasts
- 2 cans black beans
- 2 cans Northern beans
- 2 cans corn
- 3 cans stewed tomatoes
- 1 can diced green chilis
- 2 T powdered Ranch dressing mix
- 2 t. cumin
- 2T lime juice
- 2 t. onion powder
- 3 T minced garlic
- 1 c water
- 2 (8oz) blocks of cream cheese
Instructions
Mix everything together in the ninja foodi or instant pot. Pressure cook for 20 minutes.
Remove chicken breasts and cut up into bite sizes then replace back into the chili.
Serve & enjoy!
Notes
You can use fresh or frozen chicken, the cooking time is the same- it will just take a little longer to get up to temperature with frozen.
