This recipe is the easiest and most delicious version of meatloaf I have found. It’s so easy my 11 year old son makes it. I’ve had lots of people ask me for the recipe over the years, so here it is. The original recipe, or at least it’s inspiration, came from an episode of Rachel Ray I watched years ago.
You can make this meatloaf and bake it in muffin tins (cooks much faster) or you can bake it in a loaf like traditional meatloaf. It also freezes well, just put it in your loaf pan and freeze it before baking it. If you need the loaf pan you can pull it out of the pan once it’s frozen and wrap it up and put it back into the freezer.
If you purchase large packages of ground beef it’s usually cheaper, this is a perfect recipe to make multiple meals and freeze it!

Ingredients
- 2 lbs Ground Beef
- 1 box stuffing mix
- 2 eggs
- 1/2 c. Ketchup
Instructions
Mix by hand all the ingredients together just until they are blended. (If you overmix it your meatloaf will be tough) Place into a loaf or muffin pan. Drizzle extra ketchup on top (optional)
Bake at 375 degrees for 1 hour. Adjust time for the size of your loaf or muffin pan.
Notes
This is one of the recipes that I always make extra and pop them into the freezer. Typically I will buy a 5lb package of ground beef and use 2-3 boxes of stuffing mix, and 5 eggs. Then it will make 1 loaf for dinner that night and at least 2 for the freezer.
