Roasted Tomato Sauce

We picked all of our tomatoes left in the greenhouse before they froze- they were all still green, so we let them sit for a couple weeks and they turned red. The problem was they were super small so I wasn’t sure what to do with them, until I made this sauce! Problem solved!

This recipe was inspired by Tropical Smoothie Café- I LOVE their sauce they give with their quesadillas. This is my copycat recipe.

Ingredients

  • Onions
  • Peppers
  • Tomatoes
  • Garlic
  • Salt
  • Olive Oil
  • Seasonings of choice

Instructions

The most important thing to remember with this recipe is that it's totally flexible!  Put whatever you like in it! In my video above I put: onions, peppers, tomatoes, olive oil, salt, minced garlic, and woodfired garlic seasoning. Whatever you have- whatever you like, chop it up, coat it in olive oil and salt, broil it until it starts to char or turn black in some spots.  Then blend it up as smooth or chunky as you like it! This works as a great sauce for pasta, chips, quesadillas, and so much more!
