Sausage Potato Bacon Shots

These are the perfect little appetizer sure to make everyone love your BBQ’s this Summer!

Who are we kidding, these are a hit ANY time of year!

My husband cooks these on the smoker but you can also bake them in the oven if you want. Just fill up a cookie sheet with them and cook them in either place.

Ingredients

  • 1 Kielbasa or large sausage of your choice
  • 1 package of bacon (thin works better than thick sliced)
  • 1 family size package of instant mashed potatoes made up (about 2-3 cups worth)- you can use any flavor variety or even home made
  • 1 cup shredded cheese
  • toothpicks

Instructions

Slice the sausage into circles about 1/2" thick.  These are the base of your "shots" and give the stability.

Cut the bacon slices in half.  Wrap each half slice around 1 of the sausage circles and secure with a toothpick.

You now have a sort of cup/shot.  Fill the inside with mashed potatoes.  The easiest way to do this is to put your mashed potatoes inside a ziploc bag then cut one of the bottom corners and pipe the potatoes in (kind of like frosting a cupcake).

Sprinkle a little cheese on top.  Smoke or bake until your bacon is cooked.  Enjoy!
